Question about Manual Shooting

Looking for some hints on where to start. Will be going on a trip to the Grand Canyon, with an overnight stay in the village. I believe the moon will be either full or near full on that night, and am thinking of walking to an overlook to try some photos of it over the canyon. I have misplaced my books that came with the camera (Sony a200), so like I said needs hints where to start for manual shots...

For starters, bracket!

Manual focus, manual aperture diaphragm, manual exposure???

Try shooting the moon while you are local, that'll start to give you an idea of the range in exposure you'll need to capture in order to have detail in the moon and have a good exposure on the landscape.

Bring a laptop and preview your images immediately after you shot them, on-location.

I'd like to suggest to anyone shooting in manual that they take three pictures in the same light with their camera meter centered for normal exposure for each of:

a) a black piece of card
b) a 17% gray card
c) a white piece of card

Look at the resulting images and look at the histograms.

Next, meter and shoot the gray card again, then shoot the black card and the white card, but without adjusting your exposure.

Look at the resulting images and histograms and compare them with the previous batch.

Can you explain what you see and why?
